Cilantro Lime Slaw

Whether you’re looking for a delicious topping for tacos, or a perfect side dish for a cookout, this Cilantro Lime Slaw will not disappoint. It is filled with fresh and flavorful ingredients, and takes 10 minutes or less to make!

Bright, herbaceous cilantro, spicy jalapeno, and fresh lime juice are a classic flavor combination that work beautifully in this creamy slaw recipe. It is delicious enough to stand on it’s own as a side dish, but I especially love it as a topping for tacos, BBQ sandwiches, and burgers!

For this slaw, I use pre-shredded and bagged coleslaw base, which is a huge time saver. These bags are a blessing when I need a quick side to complete dinner and have become a staple in my fridge.

A great side for a cookout, and topping for tacos or BBQ sandwiches.

Ingredients

  • 14 oz. bag shredded coleslaw
  • 1 jalapeno, seeds removed and julienned
  • 1/2 cup cilantro, chopped
  • 2/3 cup vegan mayo
  • 1 tbsp agave nectar
  • 3/4 tsp salt
  • Juice of 2 limes

Instructions

In a large bowl, whisk together mayo, agave, salt, and lime juice.

Add coleslaw, jalapeno, and cilantro to the bowl and toss everything together until it is well-mixed.

Serve immediately, or make ahead and refrigerate for a few hours.

Notes

Can be made ahead of time, but is best served within 2 days.
