Banana Oat Muffins

I rarely post recipes for baked goods but spending the majority of 2020 stress baking due to the pandemic, gave me the confidence to finally publish some baked delights. I have made this recipe dozens of times over the past year, and it never disappoints.

These Banana Oat Muffins are a hit with my entire family! My young kiddos love them just as much as the adults, and it is not uncommon that I get requests to bake these almost every weekend. This recipe is so easy to make and the ingredient list is mainly comprised of pantry staples. It’s chock full of bananas, applesauce, oats, and whole wheat flour, so you can feel good about serving these tasty morsels at breakfast or for snack time.

They are also a great way to get kids involved in the kitchen activities! Both my boys help stir the wet and dry ingredients, help fill the muffin cups, and of course help devour them once baked.

A simple yet tasty option for breakfast or snack time.

Ingredients

  • 1 flax egg (see note)⁣
  • 3/4 cup apple juice ⁣
  • 2/3 cup dried cranberries⁣ (or other small pieces of dried fruit)
  • 1 cup banana, chopped⁣
  • 1/2 cup apple sauce⁣
  • 1 cup whole wheat flour⁣
  • 1 cup quick oats⁣
  • 1/3 cup sugar⁣
  • 1 tbsp baking powder⁣
  • 1/2 tsp salt⁣
  • 2 tsp cinnamon⁣

Instructions

Preheat oven to 400°F.

Mix wet ingredients in a bowl. In another bowl, mix the dry ingredients.

Next, combine wet and dry ingredients; mix well.

Spray a muffin pan lightly with avocado oil, or line pan with muffin cups. Fill prepared muffin cups 2/3 of the way full and bake for 15-18 minutes.

Notes

To make 1 flax egg: Mix 1 tbsp flax meal with 2.5 tbsp water. Let the mixture sit for 3-5 minutes before use.
