For me, campfire cooking brings back all the nostalgia of summertime as a kid.
I’ve been thinking a lot about these meals we used to make when camping called “hobo dinners”. Basically just wrap burgers and veggies in foil and throw them in the campfire. Unfortunately I don’t have any camping trips planned this year, but I do have a grill. So I decided to update that classic “hobo dinner”.
No grill? No problem! This same meal can be cooked in a 400°F oven, just increase the cook time by 5-10 minutes.
Foil Pack Fajita Wraps
Easy summertime meal with a basically zero cleanup!
Ingredients
- 3 veggie burgers, thawed and cut in strips
- 1 med onion, sliced
- 2 small bell peppers, cut in strips
- 1 jalapeño, thinly sliced
- 2 cloves garlic, minced
- 1/3 cup fresh cilantro, chopped
- 1 tbsp avocado oil
- 4 tsp fajita seasoning (see "Notes" for recipe)
- Juice of 2 limes
Instructions
Combine all ingredients in a large bowl and mix well.
Divide mixture onto 4 large pieces of heavy-duty aluminum foil. Fold and crimp foil packets to close.
Place packets on grill heated to 350°-400°F. Grill for about 15 minutes flipping halfway through. You can always pull a packet off the grill and cut open to check doneness.
Remove from grill and give them a few minutes to cool before unwrapping.
Serve inside tortillas with your favorite Mexican condiments.
Notes
Fajita Seasoning is equal parts: Onion Powder, Garlic Powder, Chili Powder, and Cumin, with just a dash of crushed red pepper flakes.
