Quinoa is a superfood and so easy to utilize as a delicious addition to any meal. We typically treat quinoa as a grain but it is actually a seed which makes it gluten-free and allergy-friendly. It also provides a complete protein source with all 9 essential amino acids and has a ton of beneficial vitamins and minerals. So really, quinoa is a total win!
This recipe for Good Olde Quinoa Salad is so simple and versatile, and is what I lovingly refer to as a “fridge dump”. Just look through your pantry and fridge, and use up the items you have on hand!
By changing the citrus, beans, and/or herbs, you can create totally different flavor profiles. This salad is a chance to get creative, the sky is the limit!
Good Olde Quinoa Salad
A fresh, summery, and healthy side salad.
Ingredients
- 1 cup quinoa, rinsed
- 2 cups water, or veggie broth
- 1/4 cup olive oil
- Zest & juice of 2 limes
- 2 tsp cumin
- 1 tsp salt
- 1 jalapeno, minced
- 2 cups cherry tomatoes, halved
- 1 can black beans, rinsed & drained
- 2 cups baby spinach
- 1 cup corn
- 1/2 cup green onions, chopped
- 1/4 cup fresh herbs, chopped (you can use cilantro, parsley, basil, or dill)
- Salt & pepper to taste
Instructions
Combine quinoa and water or stock in a pot and bring to boil. Once mixture boils, reduce heat to low and simmer until the liquid is absorbed, about 15-20 minutes. Set aside to cool.
In a mason jar, combine olive oil, citrus zest & juice, cumin, and salt. Screw on the lid and shake well.
Mix the remaining ingredients in a large bowl with the cooled quinoa. Pour dressing over the mixture, toss, and season with salt & pepper to taste.
Notes
Rinse quinoa in a mesh colander before cooking to remove bitterness. Use the recipe as listed, or get creative and add your own spin!
