Spicy Asian Cucumber Salad

At some point every summer, my garden just inundates me with cucumbers. It always seems exciting at first but eventually, I start dreading these seemingly innocuous veggies. It’s at that point, I need to get creative! This recipe for Spicy Asian Cucumber Salad was born out of the cucumber doldrums of summer.

Really though, cucumbers are amazing and so versatile. They are light and refreshing, so it’s not surprising that they pair really well with spicy flavors. When developing this recipe, I wanted to bring spicy, Asian-inspired flavor while still celebrating this beautiful and subtle vegetable.

Spicy Asian Cucumber Salad

An Asian-inspired version of a classic summer side salad with a kick.

Ingredients

  • 1 English cucumber, thinly sliced
  • 1/2 yellow bell pepper, thinly sliced
  • 2 tbsp rice vinegar
  • 2 tsp sesame chili oil
  • 1 tbsp cilantro, chopped
  • 1/4 tsp salt
  • Pinch of cayenne

Instructions

Put cucumber slices in a colander and coat generously with salt. Let the slices sit in the colander for 30 minutes as the salt draws moisture out.

Rinse and drain cucumbers, then pat dry with a couple paper towels.

Combine cucumbers, bell peppers, rice vinegar, sesame chili oil, and cilantro in a medium sized bowl. Mix well and add salt to taste.

Garnish each serving with a pinch of cayenne.

Notes

Be careful with the cayenne, that stuff is spicy!
