Sweet Potato & Peanut Potage

As soon as October rolls around, pumpkin recipes start getting all the attention. I’m here to remind you that the humble sweet potato is just as versatile, hearty, and delicious!

Potage is basically just a thick soup and this one is downright tasty! It’s loaded with seasonal veggies, a beautiful spice mix, and creamy, dreamy peanut butter. This recipe has a mild spice that will accommodate all diners but if you’re serving spice fiends, feel free to increase the cayenne and garnish with hot sauce.

This potage can be eaten on it’s own but it’s even better when served with a grain and topped with chopped peanuts and fresh herbs.

A delicious and creamy soup made with sweet potatoes and peanut butter.

Ingredients

  • 2 tbsp olive oil ⁣
  • 1 small red onion, diced⁣
  • 1 yellow bell pepper, diced⁣
  • 3 tbsp fresh ginger, chopped⁣
  • 1/2 tbsp thyme⁣
  • 1/2 tbsp paprika⁣
  • 1/4 tsp nutmeg⁣
  • 1/4 tsp cinnamon⁣
  • 1/8 tsp cayenne⁣
  • 3 cups sweet potatoes (orange-fleshed), peeled & diced⁣
  • 1/2 cup carrots, peeled & diced⁣
  • 1 15oz can diced tomatoes, with the juice⁣
  • 4 cups vegetable broth⁣
  • 3/4 tsp salt⁣
  • 1/2 cup natural peanut butter⁣
  • 1 tbsp rice vinegar⁣
  • Garnish:
  • Dry-roasted peanuts, chopped
  • Fresh cilantro, chopped

Instructions

Heat oil in a large soup pot over medium heat. Add the onion, pepper, and ginger to the pan and sauté for 3-5 minutes until veggies are softened. Add the herbs and sauté another minute, stirring constantly.⁣

Add the sweet potato, carrot, diced tomatoes, broth, and salt to the pot. Bring to boil then reduce to a simmer for 25-30 minutes.⁣

Stir in the peanut butter and rice vinegar. Blend until smooth and check seasoning before serving. ⁣

Garnish with chopped peanuts and cilantro.

Notes

If you like spicy, I recommend increasing the cayenne to 1/4 tsp and serving with sriracha⁣.

    If I don’t have cayenne, is there another spice you might recommend? I know my husband always prefers a spicier dish haha
