Granola is something I rarely buy in the store. Store-bought varieties tend to not only be filled with oil and sugar, but are also quite expensive. The great news, is that this Date & Nut Granola is delicious, and also so easy to make at home.

It’s nice to control the variety and amounts of oil and sweeteners used, and also just so fun to customize the flavors. I love combining different fruits, seeds, nuts, and spices to get a unique mix every time. This recipe features walnuts, almonds, hemp seeds and dates, but some of my other favorite ingredients to substitute are:
- Hazelnuts, pecans, cashews, and macadamia nuts.
- Pumpkin seeds, and sunflower seeds.
- Dried apricots, raisins, dried cherries, and dried cranberries.

This recipe for Date & Nut Granola is made refined sugar-free and gluten-free using date syrup to sweeten and almond flour to bind. It also features heart-healthy coconut oil instead of vegetable oils that are typically found in store-bought granolas.
It is important to use raw nuts in this recipe as pre-roasted nuts will tend to overcook in this process. Homemade granolas need to cook low and slow to achieve the perfect crunchy texture without burning your batch. Halfway through the cooking process, make sure to pull the granola out of the oven, stir it around, and pat it down to get an even bake. It makes a delicious addition to to the breakfast table but also is a fantastic snack on it’s own.
Date & Nut Granola
A healthy and tasty homemade version of granola.
Ingredients
- 3 cups rolled oats
- 1/2 cup raw walnuts, chopped
- 1/2 cup raw almonds, chopped
- 1/2 cup almond flour
- 1/2 cup hemp seeds
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/8 tsp ginger
- Pinch of allspice
- 1/2 cup coconut oil, melted
- 1/2 cup date syrup
- 1 tsp vanilla
- 10-12 dates, chopped
Instructions
Preheat oven to 300°F.
Mix all ingredients from rolled oats through allspice in a large bowl. In a smaller bowl, whisk together the coconut oil, date syrup, and vanilla. Pour the wet ingredients over the dry ingredients and mix well.
Press mixture evenly into a baking pan lined with parchment paper. Bake for 20 min, then pull the pan out of the oven and stir the granola up a bit. Pat back down on the pan and bake for another 10-15 minutes.
Let granola cool on the pan for 5-10 minutes and then break up and transfer to a large bowl. Mix in the chopped dates and enjoy!
Notes
Feel free to change the nuts and substitute dried fruit for the chopped dates.
