I tried radicchio for the first time last year in a produce box, and have been enamored of it since. I love how it adds a beautiful color and bitter bite to salads when eaten raw, and how smoky and earthy it is when cooked. After much experimentation, I feel confident finally posting a recipe for this wonderful vegetable.
Radicchio is beautiful a bitter leafy green and member of the chicory family, originating from Italy. While it is available at the grocery store year-round, the fall and winter months are when radicchio is in peak season. It’s striking reddish-purple color is a gorgeous addition to any plate!
This recipe uses a long marinade (6-8 hours) before grilling to impart a ton of flavor into the radicchio. Once marinated, this recipe takes only 10 minutes to cook and is a perfect vegan side dish!
Savory Grilled Radicchio
Grilled radicchio slowly marinated in an Asian-inspired dressing.
Ingredients
- 3 small radicchio, quartered lengthwise leaving core intact
- 3 tbsp avocado oil
- 2 tbsp agave syrup
- 1 tbsp rice vinegar
- 2 tsp coconut aminos
- 1 tsp sesame oil
- 1 tsp fresh ginger, minced
- 1 clove garlic, minced
- Zest and juice of 1 small lime
Instructions
In a bowl, whisk together all ingredients except for radicchio. Then pour mixture into a shallow dish large enough to add radicchio quarters.
Add the radicchio and turn several times to coat in marinade. Cover and refrigerate for 6-8 hours or overnight.
Heat grill to medium-high (350-375 degrees F). Remove radicchio from marinade and place directly on the grill.
Cook, turning occasionally, until they just begin to wilt and char in spots, 6-10 minutes.
Season with a little salt and some cracks of fresh black pepper. Serve warm.
