A hearty bowl of pasta is my happy place, I could probably eat noodles every night of the week. As much as I love a traditional pasta with red sauce, I try to find ways to switch it up and incorporate different flavors.
This recipe features a butter-thyme sauce that provides a delicious Fall-inspired flavor and pairs perfectly with veggie sausage. Any veggie sausage will work nicely in this recipe, but I’m partial to the Tofurky brand.
Veggie Sausage & Broccoli Pasta
A pasta packed with veggies and fresh herbs.
Ingredients
- 12oz tube pasta, cooked and about 3/4 cup water reserved from the cooking liquid
- 1 tbsp olive oil
- 1 large shallot, sliced
- 2 veggie sausages, sliced
- 2 cups broccoli, cut into small florets
- 2 pints cherry tomatoes
- 2 cloves garlic, minced
- 2 tsp thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 3 tbsp plant-based butter
- 1/2 cup basil, hand torn
Instructions
Heat oil in a large skillet over medium heat and sauté shallot about 2 minutes. Add sausages and cook, stirring occasionally, until lightly browned, another 2 minutes.
Add broccoli to the pan and sauté about 3 minutes until it starts to soften. Then add tomatoes, garlic, thyme, salt & pepper, stir to combine, and cook for 4 minutes, pressing down on some of the tomatoes with the back of a wooden spoon to encourage bursting.
Turn heat to low and stir in butter until melted. Start adding the starchy pasta water little by little and stir to create a sauce. Once your have a nice consistency, add pasta and fresh basil to the pan.
Notes
While this mixture is in process, cook pasta according to directions and save 3/4 cup of the cooking liquid.
