Much of my day is spent chasing around 2 kiddos, which means it’s a rare instance that I have extra time in the evening to make long, complicated meals for dinner. In fact, many nights I really need meals that I can serve in 20 minutes or less. This Quick Tomato Bisque is the perfect answer when I’m crunched for time but still want a home-cooked meal to serve my family.
This classic soup is tasty, healthy, and my kids love it; which is a total win! The ingredients are items that I always have stocked in my pantry and fridge so I can whip up this recipe anytime for an easy, no-fuss family meal.
Once the bisque is done cooking, you can use a single fresh herb or a variety of them to brighten up the soup’s flavor. It’s also nice give your family an interactive dining experience by chopping up a few different herbs and placing them in small bowls on the table so your kids can explore different flavor combinations and customize each bowl to their liking!
Quick Tomato Bisque
A healthy and tasty tomato soup ready in less than 20 minutes.
Ingredients
- 1 tbsp olive oil
- 1 cup red onion, minced
- 1 cup vegetable stock
- 28 oz. can crushed tomatoes
- 1/2 tsp salt
- Pinch of black pepper
- 1 cup non-dairy milk
- 2 tbsp maple syrup
- 1/4 cup fresh herbs of your choice, chopped (basil, parsley, cilantro, dill, etc)
Instructions
Heat olive oil in a soup pot on medium heat. Saute onions for 3-5 minutes, until translucent.
Add stock, crushed tomatoes, salt, and pepper to the pot. Bring everything to a boil and then reduce heat. Cover and simmer for about 6-8 minutes.
Remove from heat and stir in the non-dairy milk and maple syrup.
Blend using and immersion blender or in batches with a stand blender.
Stir in fresh herbs and serve.
Notes
If your prefer a chunkier soup, you don't need to blend it. Also, feel free to mix and match fresh herbs to switch up the flavor profile.
