Carrots are a vegetable I always have on hand in my kitchen. They are delicious raw or cooked, add wonderful flavor and color to recipes, and they keep for a long time. Truly a wondrous crop worth celebrating!
This Carrot Ginger Soup is jam-packed with…you guessed it, carrots. This luscious soup takes only 25 minutes to make and it’s ingredient list is made with pantry staples. I kept this recipe simple so the carrots really shine. Fresh ginger adds a hint of spice and a bright flavor, while cumin gives some background smokiness.
This soup also makes a tasty and nutritious weekday lunch and is on the regular rotation in my meal prepping arsenal on the weekends.
Carrot Ginger Soup
A simple yet hearty celebration of carrots...in soup form.
Ingredients
- 1 tbsp avocado oil
- 1 small onion, diced
- 3 cups vegetable broth
- 4 cups carrots, chopped
- 2 tbsp fresh ginger, grated
- 1 tsp salt
- 1 tsp cumin
- 1/8 tsp pepper
- 1/2 cup coconut milk (or other non-dairy milk)
Instructions
Heat oil in a pot over medium heat. Add onion and saute until softened 3-5 minutes.
Add the vegetable broth, carrots, and ginger to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.
Add in the rest of the ingredients and blend with an upright or immersion blender until smooth.
Notes
This recipe can be made oil-free by sauteing the onion in a little bit of vegetable both or water.
