🍒Cherry Almond Breakfast Quinoa🍒⁣⁣

This recipe is a quick and tasty alternative to your morning bowl of oatmeal. The quinoa provides a nice protein boost to start the day and it only takes about 25 minutes to make!⁣
⁣⁣
1 1/2 cups non-dairy milk⁣⁣
1 cup water⁣⁣⁣
1/4 tsp salt⁣⁣⁣
1 cup quinoa, rinsed⁣ and drained⁣⁣
1/2 cup dried cherries⁣⁣⁣
2 tbsp maple syrup⁣⁣⁣
1/2 tsp cinnamon⁣⁣⁣
1/8 tsp nutmeg⁣⁣⁣
1/4 tsp almond extract ⁣⁣⁣
Sliced fresh cherries⁣⁣
Toasted sliced almonds⁣⁣
⁣⁣
Bring the milk, water, and salt to a boil. Add the quinoa and cherries then reduce heat to low. Simmer, stirring occasionally for about 20 minutes, until the liquid is absorbed.⁣⁣⁣
Remove from heat and then stir in maple syrup, cinnamon, nutmeg, and extract.⁣⁣⁣
Serve warm topped with fresh cherries, almonds, and more non-dairy milk.⁣⁣⁣

✅Easy marinade for tofu, tempeh, portobellos, etc. using pantry staple ingredients.⁣⁣
✅A simple yet flavorful protein boost for stir-fry, ramen, noodle dishes, or even just as a snack!⁣⁣
⁣⁣
Sesame Ginger Tofu⁣⁣
⁣⁣
1 block extra-firm tofu, pressed and cubed⁣⁣
4 tbsp tamari⁣
3 tbsp rice vinegar⁣⁣
3 tbsp mirin⁣⁣
2 tsp hot sesame oil (if you prefer no spice, use regular sesame oil)⁣⁣
1/2 tbsp ground ginger⁣⁣
1-2 cloves garlic, minced⁣⁣
⁣⁣
Place cubed tofu in a shallow dish. Whisk remaining ingredients and pour over tofu. Marinate for at least 30 minutes, but preferably a few hours.⁣⁣
Heat 1-2 tbsp sesame oil in a pan on medium heat. When hot, add tofu cubes and any remaining marinade. Fry tofu for 10-15 minutes; rotating cubes to crisp on each side.⁣

I love pickled ginger with my sushi, but not super into all the dyes and preservatives that come along for the ride. ⁣
Luckily, pickled ginger is easy to make at home with simple pantry staples! ⁣⁣

Quick Pickled Ginger⁣⁣
⁣⁣
1/3 cup ginger, peeled & sliced very thin⁣⁣
1/2 cup water⁣⁣
3 tbsp apple cider vinegar⁣⁣
1/2 tsp natural sugar⁣⁣
1/4 tsp salt⁣⁣
⁣⁣
Place all ingredients except ginger in a small bowl and whisk well.⁣⁣
Add ginger, cover bowl, and refrigerate for 1 to 2 days before use.⁣

Squeeze 1/2 a lime into a highball glass. Add coconut rum and pineapple juice, then fill with ice. Top off glass with pineapple-flavored sparkling water or club soda. ⁣

Getting back into the swing of things with this GRILLED RED PEPPER HUMMUS⁣

There really isn’t a more classic snack than hummus. It’s a low-fat and high-protein flavor bomb!⁣
Homemade hummus is so easy to make and way cheaper than buying the prepared ones at the store. I especially love making my own hummus to control the seasonings and spices, and make it just to my liking every time.⁣
⁣
Grilled Red Pepper Hummus⁣
⁣
1 large red bell pepper⁣
1 can low sodium chickpeas, drained⁣
2 clove garlic, peeled⁣
4 tbsp tahini⁣
2 tbsp olive oil⁣
Juice of 1/2 lemon⁣
1/2 tsp smoked paprika⁣
1/2 tsp salt⁣
1/8 tsp black pepper⁣
⁣
Preheat grill to between 375-400 F. Grill pepper for 10-15 minutes, turning a few times until charred. Place pepper in a bowl and cover with a towel.⁣
When pepper is cool enough to handle, peel off as much of the skin as possible. Remove stem and seeds.⁣
Place bell pepper and all other ingredients in a food processor. Blend until nice and creamy. Check seasoning and eat up!⁣

•BUCKWHEAT PILAF • Vegan & Gluten-free • 20 minute cook time•⁣⁣

The base of this pilaf is buckwheat, which despite it’s name, is actually not wheat. It is a nutritious and hearty gluten-free alternative that not only provides a great source of fiber, but also a complete protein source. Buckwheat has a lovely chew, a great taste, and only takes about 20 minutes to cook!⁣⁣
⁣⁣
Buckwheat Pilaf⁣
⁣⁣
⁣1 cup hulled buckwheat (I use @edenfoods )
2 tbsp olive oil⁣
2 shallots, thinly sliced⁣
2 cloves garlic, minced⁣
1 cup red bell pepper, diced⁣
3/4 cup carrot, grated⁣
1/4 cup green onion, sliced⁣
2 tbsp coconut aminos⁣
1 tbsp cilantro, chopped⁣
1/2 tsp crushed red pepper⁣
Juice from 1 small lime⁣
⁣
Cook 1 cup of buckwheat according to the package directions. Once it finishes cooking, fluff with fork and set aside in a large bowl.⁣
While the buckwheat cooks, heat the olive oil in a pan over medium heat. Add the shallots, garlic, and bell pepper, and saute for about 5 minutes; until softened.⁣
Add the cooked shallot mixture to the bowl of buckwheat along with all other listed ingredients and mix well.⁣
