Grilled Pineapple Cilantro Tofu

I love tofu. It has a wonderful texture, is a fantastic source of protein, and is extremely versatile. However, the biggest challenge with tofu is always how to add flavor, as it is quite bland. Because it is mostly tasteless, I am constantly working on flavorful new marinades to jazz it up!

This Pineapple Cilantro Marinade is a bright blend of fruit, spice, and fresh herbs that brings a lusciousness to this protein. I make this recipe with jalapeno, but if you like things really spicy, I recommend substituting serrano peppers.

This recipe does require some planning ahead; always take the time to press your block of tofu prior to marinating. You can always wrap the tofu in towels and stack heavy plates/pans on top of it, but if you cook tofu at least a few times a month, then I suggest investing in a tofu press (you can buy a great press for under $30 online)!

As with any marinade, I recommend marinating the tofu for at least an hour, but more time is always welcome. I wrote this recipe for grilled tofu (my preferred method) but you could also pan fry or bake it after marinating!
