…when assembling kebabs, don’t mix the tofu and veggies on the same skewer! I know, I know, my picture shows otherwise, but that is just for the camera. I recommend using individual skewers for individual kebabs, separate tofu, veggies, and even fruit (if using) onto different skewers. This way each item will cook evenly and at the same speed.
This lemon herb marinade pairs perfectly with tofu and any variety of veggies or fruit you choose to skewer. It is a beautiful and bright celebration of summer, packed with lots of lemon flavor and fresh herbs.
To cut down on dinner prep time, the tofu can be pressed and then marinated hours before you want to cook dinner. I’ve listed a few vegetables to skewer with the tofu but feel free to mix things up put your favorites on these kebabs. Happy grilling!
Lemon Herb Tofu Kebabs
A lovely mix of tofu and vegetables with a fresh summery marinade.
Ingredients
- Lemon Herb Marinade:
- 1/3 cup red wine vinegar
- 3 cloves garlic, chopped
- Juice & zest of 1 lemon
- 2 tsp fresh oregano
- 2 tsp fresh thyme
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/2 cup olive oil
- Tofu Kebabs:
- 6-8 wooden skewers, soaked in water for 30 minutes before cooking
- 1 block tofu, pressed for at least 30 minutes
- 1 pkg small button mushrooms
- 1 bell pepper, cut in appropriate sized cubes for skewering
- 1/2 yellow onion, cut in appropriate sized cubes for skewering
- 1/2 pkg cherry tomatoes
- Avocado oil spray
- Salt & pepper
Instructions
Lemon Herb Marinade:
Pulse all ingredients except olive oil in blender. Slowly add oil while blender runs to create a thick sauce.
Tofu Kebabs:
Once tofu has pressed, cut it into cubes large enough to hold up on the skewer. Place tofu in the marinade and let sit for at least 30 minutes.
Combine all veggies in a large bowl. Spray with avocado oil and season with salt & pepper.
Once tofu is done marinating, begin assembling kebabs (see notes).
Preheat grill to 350-400F.
Grill tofu kebabs for 12-15 minutes and vegetable kebabs for 6-10 minutes. Turn kebabs every few minutes and use the remaining Lemon Herb Marinade to baste as they cook.
Notes
Make sure to soak the wooden skewers so they don't catch fire. When assembling kebabs, don't mix the tofu and veggies on the same skewer.
