I love tofu. It has a wonderful texture, is a fantastic source of protein, and is extremely versatile. However, the biggest challenge with tofu is always how to add flavor, as it is quite bland. Because it is mostly tasteless, I am constantly working on flavorful new marinades to jazz it up!
This Pineapple Cilantro Marinade is a bright blend of fruit, spice, and fresh herbs that brings a lusciousness to this protein. I make this recipe with jalapeno, but if you like things really spicy, I recommend substituting serrano peppers.
This recipe does require some planning ahead; always take the time to press your block of tofu prior to marinating. You can always wrap the tofu in towels and stack heavy plates/pans on top of it, but if you cook tofu at least a few times a month, then I suggest investing in a tofu press (you can buy a great press for under $30 online)!
As with any marinade, I recommend marinating the tofu for at least an hour, but more time is always welcome. I wrote this recipe for grilled tofu (my preferred method) but you could also pan fry or bake it after marinating!
Grilled Pineapple Cilantro Tofu
A tasty and tropical take on tofu.
Ingredients
- 1 block firm or extra-firm tofu, pressed and drained
- 1 cup pineapple juice
- 1 jalapeño, seeds removed
- 2 cloves garlic
- 1/2 cup cilantro leaves
- Juice of 1 lime
- 2 tbsp avocado oil
- 1 tbsp agave
- 1 tsp salt
- A few cracks of black pepper
Instructions
Cut tofu into desired shapes, making sure the cuts are thick enough to grill.
Add the rest of the ingredients to a blender and run until smooth. Place tofu in a shallow dish and pour sauce over to marinate.
Cover tofu and put in fridge to marinade for at least 1 hour.
Preheat grill to 350°-400°F. Grill tofu for about 5-8 minutes per side, basting with leftover marinade.
Notes
If you like things extra spicy, use serrano pepper instead of jalapeno.
